Peel the apples, hollow out to remove the seeds. Slice (8 slices per
apple approximately). Arrange in a deep dish, sprinkle with rum. Leave
to macerate. Sift the flour onto a terrine dish, make a well. Put in the
salt, sugar, vanilla sugar, the eggs. Mix while adding half of the beer
little by little, the milk, then the melted butter. Just before frying,
fold in the stiffened egg whites. The batter must coat the spoon from all
sides. Take the apple slices one by one, dip in the batter and put in hot,
but not smoking, frying oil. Take out and drain on paper towel, then arrange
in the serving dish. Sprinkle with confectioners sugar. Serve warm or hot.
